Apart from the importance of getting the right length of stem there isn't much to say. Matching a stem to your handlebars is a nice touch aesthetically but it's purely that. In terms of alloy vs carbon there's generally not much weight difference unless your buying a nasty 10 quid one. You can now buy carbon wrapped alloy stems which offer the best of both worlds.
